Ingredients

75 ml lukewarm water

2.5 ml olive oil

Salt

0.25 tbsp sugar

125 g plain flour

1.75 dried yeast

125 g strawberries

67.5 mascarpone

Icing sugar

Fresh mint or basil

Method dough

  1. Make sure the water is lukewarm, around 30–40°C (hand-warm).
  2. Mix the water, olive oil, salt, sugar and 1/10 of the flour in a bowl. Add the yeast and stir until combined.
  3. Add the remaining flour and knead into a firm dough, either with a mixer with dough hooks or by hand.
  4. Shape into a ball and place back in the bowl. Cover with a damp cloth and let rise in a warm place for 30 minutes.
  5. Divide the dough into 2 balls (for 4 servings) and knead briefly. Place them side by side on a board, cover again with a damp cloth, and let rise for 30–60 minutes.

Method pizza

  1. Preheat the oven to 250°C (top and bottom heat).
  2. Roll out each dough ball into a flat pizza base. Bake for 7 minutes or until lightly golden and cooked through.
  3. Meanwhile, hull and slice the strawberries.
  4. Spread mascarpone over the bases, top with the strawberries, and garnish with icing sugar and fresh mint or basil as desired.

A healthier strawberry pizza

Mascarpone isn’t the healthiest ingredient, but you can easily make this pizza lighter. Replace half of the mascarpone with Greek yogurt or cream cheese for a fresher, lower-fat base under the strawberries.
