8 Sinterklaas chocolates

Equipment

Method jam

  1. Soak the gelatine in a small bowl of cold water.
  2. Meanwhile, add the blueberries, sugar, and water to a small saucepan, place over the heat, and bring to a boil. Cook the jam for 5 minutes, then remove from the heat.
  3. Use a fork to mash the jam slightly, add the gelatine, and stir well.
  4. Pour the jam into a bowl or container and leave to cool in the fridge for 20 minutes.

Method tiramisu

  1. Add the double cream and sugar to a bowl. Whisk with a mixer or food processor until soft peaks form. Be careful not to over-whip the cream.
  2. Slice the vanilla pod lengthways and scrape out the seeds. On the lowest speed, mix the seeds and mascarpone into the whipped cream until smooth. Make sure the ingredients combine well, but mix gently.
  3. Fill the glasses with a layer of ginger nuts, followed by a layer of blueberries. Spoon a generous dollop of the cream mixture over the blueberries, then add a little of the homemade jam. Repeat all the layers once more.
  4. Finish the Sinterklaas tiramisu with a Sinterklaas chocolate and a few extra blueberries.
