500 g strawberries
300 ml double cream
3 tbsp icing sugar
1 tsp vanilla extract
100 g meringues
60 ml strawberry dessert sauce
Fresh mint

Method
- Hull the strawberries and cut them into pieces.
- Add the double cream, icing sugar, and vanilla extract to a bowl and whisk until stiff peaks form.
- Break the meringues into large chunks.
- Spread a layer of whipped cream on the bottom of the serving bowl. Drizzle with some strawberry sauce, then add a layer of strawberries and a layer of meringue. Repeat until all the ingredients are used.
- Finally, garnish the Eton mess with fresh mint leaves.
