The finest berries

Ingredients

1 trifle (6 servings)

Ingredients

500 g strawberries

125 g blueberries

125 g raspberries

50 g sugar

A dash of lemon juice

50 ml water

250 g mascarpone

250 ml double cream

16 g vanilla sugar

200 g sponge fingers

500 ml custard

Fresh mint

Equipment

Trifle bowl or another deep dish

Mixer

Method

  1. Hull the strawberries and cut them into quarters. Add one-third of the strawberries, blueberries, and raspberries to a saucepan, along with the sugar, lemon juice, and water.
  2. Press the fruit gently against the sides of the saucepan with the back of a spoon. Cook over a low heat for 6–7 minutes, stirring regularly. Remove from the heat once the mixture has thickened into a sauce. Pour the sauce into a deep dish and let it cool before using.
  3. In a bowl, beat the mascarpone until smooth. Add the cream and vanilla sugar, then whisk on high speed until stiff peaks form.
  4. Spread about three-quarters of the berry sauce over the base of the trifle dish. Arrange half of the sponge fingers on top. Cover the sponge fingers with half of the custard, then add a layer of strawberries, blueberries, and raspberries. Spread half of the cream over the fruit, followed by the remaining custard. Add another layer of berries and finish with the remaining cream on top.
  5. Decorate the Christmas trifle with the remaining sauce and top with some strawberries, blueberries, and raspberries. Finally, garnish with fresh mint leaves and serve.

Preparing your Christmas trifle

You can easily prepare this Christmas trifle earlier in the day, or even a day before your Christmas dinner, so you don’t spend too long in the kitchen during the meal. To store the trifle properly, follow these steps:

  1. Make the trifle as described in the method, ending with the cream layer. Do not decorate it yet.
  2. Cover the trifle with cling film and store it in the fridge.
  3. Remove it from the fridge and decorate just before serving with the remaining berry sauce, fruit, and mint.

Christmas dessert for a large group

This Christmas dessert is very easy to make, making it ideal for serving a large group. You can either prepare multiple smaller trifles or multiply the ingredients to make one large Christmas trifle.

Beekers’ tip: You can also make the trifle in small individual glasses. This makes it easy to layer, serve, and store in the fridge.
