It combines strawberries, blueberries, raspberries, and blackberries — the fresh, sweet berries are the perfect contrast to the savoury feta and crunchy walnuts. Ingredients
200 g spinach or mixed lettuce
250 g mixed berries
100 g feta cheese
40 g walnuts
2 tbsp balsamic vinigar
4 tbsp extra virgin olive oil
Salt and pepper
400 g spinach or mixed lettuce
500 g mixed berries
200 g feta cheese
80 g walnuts

8 tbsp extra virgin olive oil

1 kg mixed berries
400 g feta cheese
160 g walnuts
8 tbsp balsamic vinigar
16 tbsp extra virgin olive oil

Method
- Take a large bowl and add the spinach, followed by the strawberries, blueberries, raspberries, and blackberries.
- Crumble the feta and roughly chop the walnuts. Scatter both over the salad.
- For the dressing, mix the balsamic vinegar and olive oil in a small bowl. Season with salt and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Divide the summer salad between plates and serve immediately.
