Treat yourself to a delicious breakfast with these banana pancakes! They are tasty, filling and incredibly easy to make. Topped with fresh soft fruit, this breakfast is a colourful treat on your plate. Have a little more time to go all out? Make your own jam to serve with the pancakes. Ingredients
0.5 ripe banana
60 g quark
40 ml oat milk
5 ml sunflower oil
0.5 tbsp lemon juice
50 g wholemeal flour
1 tsp baking powder
Salt
1.5 tbsp jam
62.5 g berries of your choice

125 g berries of your choice
2 ripe bananas
240 g quark
160 ml oat milk
20 ml sunflower oil
2 tbsp lemon juice
200 g wholemeal flour
4 tsp baking powder
Salt
6 tbsp jam
250 g berries of your choice
Method
- Mash the banana in a large bowl.
- Add 2/3 of the quark, the oat milk, oil, and lemon juice. Sift the flour over the bowl, then add the baking powder and a pinch of salt. Whisk everything together until smooth.
- Heat a pan over medium heat and add a little butter. Spoon some batter into the pan and cook the pancake until golden on both sides. Repeat with the remaining batter.
- Place a pancake on a plate, spread some quark on top, and layer the next pancake over it. Spread the next pancake with jam and continue stacking until you finish with the last pancake. Top with remaining quark and jam, and scatter the berries over the stack.
- Serve the banana pancakes optionally with a dusting of icing sugar.

Making banana pancakes
As the name suggests, banana pancakes are made with banana. But what makes banana the perfect ingredient for pancakes? First of all, it naturally sweetens the pancakes without any added sugar. Additionally, banana helps bind the batter together.
Beekers’ tip: use ripe bananas for banana pancakes. They are easier to mash than unripe bananas and naturally sweeter, making them perfect for pancakes.
Making your own jam
For this delicious recipe, we use homemade jam made from strawberries, blueberries, and raspberries. You’ll need:
- 100 g strawberries
- 70 g blueberries
- 70 g raspberries
- Juice of 1 lemon
- 70 g gelling sugar
Heat the fruit with the lemon juice and gelling sugar in a saucepan for 5 minutes. Then blend into a coarse jam. Place in the fridge until cooled – your homemade jam is now ready to use.
